Rice Pudding



This post is all about Indian traditional desert. Rice pudding ( Kheer ), one of the old and famous Indian desert. It is very popular all over India. Rice pudding is the desert which is very healthy because it is made from milk, and one of the easiest desert one can ever made. I personally like rice pudding with lots of nuts and cinnamon flavor. You can customize this desert according to your own choice.

Servings: 4 people
Difficulty: Easy
Prep-Time: 35 Mins


Ingredients:

1) 1/2 cup uncooked white Basmati rice.
2) 2 cups of Milk
3) 2 cups of coconut milk
4) 3-4 tablespoon of white sugar
5) 1/4 cup of raisins
6) 1/2 teaspoon of cardamon
7) 1/2 teaspoon of rose water (optional)
8) 1/4 cup of Sliced almonds, and nuts.


Directions:


  •  In a pan (preferably nonstick pan), mix the coconut milk, regular milk and sugar. let them boil.
  • Add Basmati rice and simmer over low heat until the mixture is  thickened and rice is tender for about 20 mins.
  • Stir in raisins, cardamon and rose water and cook for more minutes.
  • Ladle into serving bowls and garnish with pistachios.

Samosa


I conducted a poll last week for which i got few answers. Thank you everybody who replied the poll. I asked which Indian recipe would you like me to post next. Samosa was the one of dish in the list, in which people actually showed interest. So on your demand, this post is all about Samosa. I am going to post a link to the video on how to make Samosa. That video shows not only how to make Samosa, but also the Green Chutney( Mint Sauce) which usually Indians eat with Samosa.

Kerala's Sambar

The video of Sambar i posted before is the one way of making the Sambar. let's try another type of Sambar today. Kerala Sambar is different from typical Sambar made in other south Indian states, Kerala Sambar is made using a mixture of different vegetables. This dish is inspired by:



Serves: 3-4 people
Difficulty level: Medium
Ethnic Group: South Indian

Ingredients:

Boiled yellow lentil
  • Mixed vegetables ( 1 potato, 1 carrot, 1 tomato, 5 Beans )
  • 1/2 cup yellow lentil 
  • 1 Sliced onion
  • 2 Green chili
  • 4-5 garlic cloves
  • 1/2 tsp Turmeric powder
  • Tamarind 
  • 2 tsp chopped coriander leaves
  • 1 tsp red chili powder
  • 3 tsp Sambar Powder
  • 1/2 tsp Mustard seeds
  • 3 Red chilies
  • A spring of curry leaves
  • 3 tbsp oil
  • Water- as needed
  • Salt- as needed

Directions:

1. Heat 1 tbsp of oil in pressure cooker and add the sliced onions , garlic and green chilies.
Add coriander to the cooked lentil and vegetables.

2. Cook for few minutes and then add diced vegetables, and add lentil along with salt and 1/2 tbsp of turmeric powder.
3. Add enough water in the pressure cooker, cover it with the lid and cook it on medium flame upto 2 whistles.
4. Soak tamarind in 1/2 cup of warm water for sometime, squeeze and take extract from it. 
5. When lentil and vegetables are done, remove the lid of the pressure cooker and add the tamarind juice in it. Stir and simmer on low flame for some more time and add more salt if needed. 
Add the Mix( Mustard seed, curry leaves, shallots)
in the lentil
6. Add chopped coriander leaves and simmer for 2 minutes and keep aside.
7. Heat oil in a pan, and add mustard seed to it. Let it to splutter. 
8. Add shallots, red chilies and curry leaves and fry for a minute. 
9. Mix the sambar powder, coriander powder and chili powder and fry for 2 minutes on low flame. 
10. Now pour the mix in the lentil presuure cooker and mix it for a moment on a low flame.



You can eat Sambar with rice, Just boil the rice and add Sambar on the top of it and enjoy the meal.
