Rice Pudding



This post is all about Indian traditional desert. Rice pudding ( Kheer ), one of the old and famous Indian desert. It is very popular all over India. Rice pudding is the desert which is very healthy because it is made from milk, and one of the easiest desert one can ever made. I personally like rice pudding with lots of nuts and cinnamon flavor. You can customize this desert according to your own choice.

Servings: 4 people
Difficulty: Easy
Prep-Time: 35 Mins


Ingredients:

1) 1/2 cup uncooked white Basmati rice.
2) 2 cups of Milk
3) 2 cups of coconut milk
4) 3-4 tablespoon of white sugar
5) 1/4 cup of raisins
6) 1/2 teaspoon of cardamon
7) 1/2 teaspoon of rose water (optional)
8) 1/4 cup of Sliced almonds, and nuts.


Directions:


  •  In a pan (preferably nonstick pan), mix the coconut milk, regular milk and sugar. let them boil.
  • Add Basmati rice and simmer over low heat until the mixture is  thickened and rice is tender for about 20 mins.
  • Stir in raisins, cardamon and rose water and cook for more minutes.
  • Ladle into serving bowls and garnish with pistachios.

Samosa


I conducted a poll last week for which i got few answers. Thank you everybody who replied the poll. I asked which Indian recipe would you like me to post next. Samosa was the one of dish in the list, in which people actually showed interest. So on your demand, this post is all about Samosa. I am going to post a link to the video on how to make Samosa. That video shows not only how to make Samosa, but also the Green Chutney( Mint Sauce) which usually Indians eat with Samosa. 


I am sharing a small video just to give a glimpse of the menu of Nirvana restaurant. Not only the menu, this video also tell how to make shrimp Sherdil, another Indian Dish. Kerala's Sambar

The video of Sambar i posted before is the one way of making the Sambar. let's try another type of Sambar today. Kerala Sambar is different from typical Sambar made in other south Indian states, Kerala Sambar is made using a mixture of different vegetables. This dish is inspired by:



Serves: 3-4 people
Difficulty level: Medium
Ethnic Group: South Indian

Ingredients:

Boiled yellow lentil
  • Mixed vegetables ( 1 potato, 1 carrot, 1 tomato, 5 Beans )
  • 1/2 cup yellow lentil 
  • 1 Sliced onion
  • 2 Green chili
  • 4-5 garlic cloves
  • 1/2 tsp Turmeric powder
  • Tamarind 
  • 2 tsp chopped coriander leaves
  • 1 tsp red chili powder
  • 3 tsp Sambar Powder
  • 1/2 tsp Mustard seeds
  • 3 Red chilies
  • A spring of curry leaves
  • 3 tbsp oil
  • Water- as needed
  • Salt- as needed

Directions:

1. Heat 1 tbsp of oil in pressure cooker and add the sliced onions , garlic and green chilies.
Add coriander to the cooked lentil and vegetables.

2. Cook for few minutes and then add diced vegetables, and add lentil along with salt and 1/2 tbsp of turmeric powder.
3. Add enough water in the pressure cooker, cover it with the lid and cook it on medium flame upto 2 whistles.
4. Soak tamarind in 1/2 cup of warm water for sometime, squeeze and take extract from it. 
5. When lentil and vegetables are done, remove the lid of the pressure cooker and add the tamarind juice in it. Stir and simmer on low flame for some more time and add more salt if needed. 
Add the Mix( Mustard seed, curry leaves, shallots)
in the lentil
6. Add chopped coriander leaves and simmer for 2 minutes and keep aside.
7. Heat oil in a pan, and add mustard seed to it. Let it to splutter. 
8. Add shallots, red chilies and curry leaves and fry for a minute. 
9. Mix the sambar powder, coriander powder and chili powder and fry for 2 minutes on low flame. 
10. Now pour the mix in the lentil presuure cooker and mix it for a moment on a low flame.



You can eat Sambar with rice, Just boil the rice and add Sambar on the top of it and enjoy the meal.
Sambar on the top of boiled rice.

Video of How to make Sambar

We have just learnt how to make Masala Dosa, the best combination of Masala Dosa is with Sambar. It is basically a South Indian dish. There are different ways of making Sambar, people love to eat Sambar with Dosa. This dish is basically a lentil dish which has different vegetables in it. I am using different way this time to show how this dish is made. I am going to post a video showing how Sambar is made. I will post the original recipe as well. So have a look on the video



Masala Dosa

Hi Everyone, the first recipe i am going to post in my blog is " Masala Dosa" . Its a south Indian dish, but very famous in all over India. Masala Dosa is basically made up of rice and lentils. It is rich in carbohydrates and protein. They are such a knockout Mini meal any time of the day. Masala Dosa is filled with potatoes and onions filling. You will be learning how to make dosa and the filling as well through my post. This recipe is inspired by:

Serves: 3-4 people
Difficulty level: Medium 
Ethnic Group: South Indian

Ingredients:

For Dosa Shell: 

1 1/2 cup of rice
1/2 cup of Yellow lentil (Urad Dal)
Salt to taste 
Oil

For Dosa filling:

2 large potatoes
10 curry leaves
1 medium onion chopped
1/2 yellow split peas
1/2 teaspoon mustard seed
1/2 teaspoon turmeric
1-2 teaspoon green chilli
1 table spoon oil
salt to taste

Directions: Dosa Shell

Spread batter evenly on the pan.
  • Separately soak lentil and rice for at least 6 hours or overnight in water.
  • Then grind the contents from both the containers separately to a smooth paste by adding water accordingly.
  • Mix all paste together, and add salt and water to make a batter
  • Cover and keep it in a warm place for 7 hours. During this time, the batter raises and reaches approximately two and half times the original volume. So make sure that you have big enough container for the batter.
  • Mix onions and chilies to thin batter.
  • Spread the mix on the pan in circular motion to make it thin, as you can see in the picture on the side. 
  • Cook Dosa from both sides. 
  • Cook on both sides if desired. 

Dosa Filling:

Add filling to the dosa
  • Boil potatoes, peel them off and mash them.
  • Heat oil in a pan and add mustard seed in the pan.
  • When mustard seeds start pooping up, add onions, curry leaves, green chilies,salt and turmeric.
  • Add mashed potatoes and mix well.
Now finally the filling is ready. Just take a bit portion of the filling and add inside the dosa when you will be making the dosa on the pan. Fold the dosa in the middle, remove and serve it immediately. Make the filling before you start making the dosa on the pan , and the process of making the dosa will take up to 2-3 minutes.

Hi Everyone ! You all are welcome to my blog. This blog is on Indian recipes and how we can use these recipes to create a small business from our own house. So far what i have seen in Toronto, there are lots of international student who come here to study, and almost all the students come alone for at least one year to study here in Canada. Undoubtedly, they get culture shock when they come across totally different culture. At first moment, they miss their friends, family but most important they miss their food. As i am an international student, and i know what exactly it feels like when we don't get food of our country. So i just got an idea, why not to start up a small business of cooking Indian food at home, and serving Indian international students each day, who actually wants home food and that's too in a very affordable price. You can not only target Indian students in this, but also other Indian families who are actually so busy in their work and not able to make food at home, or individual who works full time but still wants Indian food at very affordable price. So here i will post Indian recipes, which will be easy to make and very yummy!! :) Keep reading.
