Masala Dosa
Hi Everyone, the first recipe i am going to post in my blog is " Masala Dosa" . Its a south Indian dish, but very famous in all over India. Masala Dosa is basically made up of rice and lentils. It is rich in carbohydrates and protein. They are such a knockout Mini meal any time of the day. Masala Dosa is filled with potatoes and onions filling. You will be learning how to make dosa and the filling as well through my post. This recipe is inspired by:
Serves: 3-4 people
Difficulty level: Medium
Ethnic Group: South Indian
Ingredients:
For Dosa Shell:
1 1/2 cup of rice
1/2 cup of Yellow lentil (Urad Dal)
Salt to taste
Oil
For Dosa filling:
2 large potatoes
10 curry leaves
1 medium onion chopped
1/2 yellow split peas
1/2 teaspoon mustard seed
1/2 teaspoon turmeric
1-2 teaspoon green chilli
1 table spoon oil
salt to taste

| Spread batter evenly on the pan. |
- Separately soak lentil and rice for at least 6 hours or overnight in water.
- Then grind the contents from both the containers separately to a smooth paste by adding water accordingly.
- Mix all paste together, and add salt and water to make a batter
- Cover and keep it in a warm place for 7 hours. During this time, the batter raises and reaches approximately two and half times the original volume. So make sure that you have big enough container for the batter.
- Mix onions and chilies to thin batter.
- Spread the mix on the pan in circular motion to make it thin, as you can see in the picture on the side.
- Cook on both sides if desired.

- Boil potatoes, peel them off and mash them.
- Heat oil in a pan and add mustard seed in the pan.
- When mustard seeds start pooping up, add onions, curry leaves, green chilies,salt and turmeric.
- Add mashed potatoes and mix well.
